Pumpkin and squash can be used in so many recipes so have a look at some of our suggestions below for risotto, soup, pumpkin cake, pesto, roast squash or for a really simple option pumpkin seeds. Great for this are our new naked seeds which are really delicious dry fried to make a really healthy snack. Roasting or pan frying squash and pumpkin really concentrates the flavour which is often sweet and chestnutty and works brilliantly in pasta, rice and gratins. Most recipes are savoury but they will also work well in pies, tarts and puddings.
There are numerous health benefits as they are packed with Vitamin A, the antioxidant beta-carotene, more potassium than a banana and plenty of vitamin C. If that wasn’t enough, they are also low in calories, fat, sodium and high in fibre.
